Thanks to the new section of the "champions", we have the opportunity to give you an account of our experience from Iyo, the first Japanese restaurant to be awarded a Michelin star. Chef Michele Biassoni leads the kitchen, while Master Masaki Okada is at the sushi counter, creating raw dishes that are beautiful to look at and good to eat.
The menu is wide and well articulated, with different original and appetizing dishes, such as the "taiyo", a seared Argentine shrimp millefeuille, red prawn, yuzu mayonnaise, squid, miso sauce with yuzu and tomato, with an explosive flavor and the pleasantly highlighted citrus note. Among the soups, we tasted the one with the "wrong mix" based on crustaceans and red miso, sea asparagus, tofu and round hazelnut from Piedmont, with a strong flavor but long tiring on the palate.

All the various types of sushi are excellent: "samba", nigiri with sea bass, lime and capers from Pantelleria, "courgette", a gunkan with seared courgette that wraps the rice, shrimp tartare, mayonnaise and tobiko, and "roses", gunkan with amberjack, Norway lobster, avocado, tobiko, mayonnaise and spicy sauce. The "yume rolls" are also excellent, uramaki with a tempura stuffed shrimp flower inside and a seared and marinated tuna carpaccio, to dip in the wasabi sauce supplied with the dish or in the simple soy sauce ( we recommend the latter as the wasabi very much covers the flavor of the roll). The wine list is well structured and includes important labels not only Italian and also a beautiful selection of sake for those who want to stay in theme with the oriental tradition. In addition to the à la carte choice, there is a tasting menu for € 95 with 8 freehand courses by the chef.
Iyo: environment
Sophisticated and elegant, with the different rooms that follow one another and the sushi counter in sight. The tables are set up in an essential way, with light-colored cloth runners, beautiful metal chopsticks and the right glasses for wine.
